Abstract:
Rutin is an important class of polyphenols and has potential antioxidant, antitumor, and other bioactivities. However, the low water solubility, instability in the gastric/intestinal phase, etc., limit its practical applications by suppressing functional abilities and bioaccessibility. Encapsulation is the well-proven process that improves the water solubility of hydrophobic polyphenols and hence has a positive impact on their bioactivity. The self-assembly process of proteins provides plenty of potential for redesigning and combining them into supramolecular assemblies for real-time applications. The present work demonstrates the encapsulation of rutin in milk-derived casein micelles followed by their molecular interactions and biological implications. The research focused on three important issues: the mechanism of interaction of rutin with the monomeric milk protein; the impact of encapsulation of rutin on its bioactivities; the release rate and corresponding kinetics of rutin from the micellar system.
